    Victoria Sponge Cake:Eggs, flour, sugar, butter/margarine (don't ask me about quantities!). mash the butter until it goes soft & creamy, then add the sugar. Beat the eggs in a separate bowl, then whisk in a bit at a time, alternately folding in a bit of flour, repeat until all the eggs & all the flour are gone (whisk the eggs, fold the flour otherwise you'll knock all the air out). Spoon into 2 greased (with butter or marg) round cake tins, cook in an oven until the top goes golden brown & rebounds if you press it. sandwich the cool cake halves together with jam and/or cream, dust with icing sugar.Submitted by John

    As for cake recipe:1 cup of All Bran1 cup of sugar (can cut this down if you want)1 cup of mixed dried fruit1 cup of milk1 cup of self raising flourMix the first four ingredients in a bowl and leave for an hour. Then add the flour and mix. Grease a bread tin and put the mixture in. Put this in a pre-heated oven at 180C/350F/Gas4 for 1 hour.Submitted By CarltonI can recommend this one, it is excellent

    Carlton sent me a recipe for bhaji batter, I'll dig it out over the weekend

    You mean this one John?4 Heaped desert spoons of gram flour 1/2 teaspoon of baking powder 1/3 teaspoon of turmeric 2 teaspoons of ground coriander ( dhanya ) 1/2 teaspoon of salt 1 teaspoon of red chilli 2 finely chopped green chillies Fresh coriander chopped finely ( to taste , but about 2 desert spoons full at least ) Mix into a batter with water. Add coarsely chopped onions and small chunks of potatoes Use a non stick frying pan or deep fry fry on a high heat turning to stop it burning Can also add mushrooms

    aye, that's the one.Try this then - chicken bhuna1lb chicken, roughly cubed1 onion, finely chopped1 jar Patak's Bhuna paste1 tin chopped tomatoesfry the onion until softened, then add half of the jar of bhuna paste, fry for 2 minutes. Add the chicken & fry until sealed.Add the tomatoes and a little water. Bring to the boil then simmer for 20 minutes, adding water to get the consistency as required.Serve with warm naan bread & onion bhajis (as above)

    OK we have the Bhuna and bhajis so all we need is the naan:-15g fresh yeast1/4 teaspoon sugar2 tablespoons warm water500g self-raising flour1 teaspoon salt150ml tepid milk150ml natural yogurt (at room temp)2 tablespoons melted butter or oilPut yeast in bowl with water & mix until dissolved & leave in warm place for 15 mins or until frothy. Sift flour & salt into large bowl, make hole in centre & pour in yeast, milk, yogurt & butter or oil. Mix to a smooth dough & turn onto floured surface. knead well for about 10 mins until smooth & elastic. Place in bowl & cover with cling film & leave to rise for 1 - 1 1/2 hrs until doubled in size. Turn onto floured surface & knead again for a few mins then divide into 6 pieces. roll each pice into a round & place on warm baking sheet and bake in preheated oven @ 240c, (475F), gas mark 9 for 10 mins. Brush with butter & sprinkle with poppy seeds & serve warm.

    I *think* it's 6 eggs to 8oz each of flour, sugar, butter. Medium oven (gas 5 or 6, electric 190-200)

    It's 4 eggs to 8oz of each. If you want to be really daring you can also add a little vanilla essence.

    Or substitute 1-2oz of the flour with cocoa powder for a nice chocolate cake; obviously you'd need some chocolate butter cream for the middle & top
