    Fish is good. As a general rule, the more unsustainable the better. Makes sense really.

    I watched that Monty Halls' thingy about sustainable fishing and thought I really ought to try various fish again. I did - bass and monkfish - made me gip!

    It's quite difficult to smoke salmon as it needs to be cold smoked not hot smoked which cooks it as well like smoked trout or mackerel . Gravadlax is quite easy to do if you like it "uncooked" , I'm sure there are squillions of recipies out there . I have been known to put it in a Caesar Salad , cooked first of course , really nice . As has been said if you have good fresh ingredients then cook them simply , that's all that's necessary .
